Cream of Broccolli and Cheddar Soup
Nothing makes me happier than a bowl of creamy soup, doesn't matter what kind. Combine that with some home made croutons and I am yours for the taking. Home made soups are so much better than the store bought and alot easier than people think, just a little investment in time.
Lets start with the croutons, 3 simple ingredients. One of our local grocery stores sells there homemade italian bread for .99 a loaf on Fridays, that combined with olive oil and season salt makes croutons better than anything from a bag.
Dice up the bread, mix with a healthy dose of olive oil and season salt...
and......bake! 375 for 20-30 mins depending on how dark and crispy you want them.
Delish on their own but soooo much better on this delishious soup!!
Ingredients...
1 bag frozen Broccoli
1 onion
3-4 cups chicken broth (I used homemade-another blog post-LOL)
8 oz cheese
splash of half and half
Melt 3-4 tablespoons of butter and add diced onion. Sweat them out til translucent (add a little garlic at this point if you want). Add a few tablespoons of flour and cook out the rawness.
Once flour turns brown wisk in the chicken broth and bring to boil. Add the frozen broccoli and simmer for about 20 mins. At this point hit it with an immersion blender (got mine for $5 at tag sale) or add to regular blender.

Now you want to add your cheese...
a turn around the pan of half andf half and a few more pats of butter. Add the croutons and.....
